- Prepare 1.5 Cup of Sooji/Semolina Roasted Vermicelli/Seviyan.
- Prepare 1 of Medium Size Sliced Onion.
- You need 2 of Medium Size Chopped Tomatoes.
- You need 1/2 Cup of Peas.
- You need 1/2 of Medium Size Chopped Capsicum.

- Firstly roast sooji vermicelli if you then are not roasted..
- Heat 1 teaspoon oil in kadhai or pan and roast 1.5 cup vermicelli till they turns to light golden brown, dont overcook it otherwise they will start burning and turns to black..
- Now remove roasted vermicelli in a plate and again heat 1 tablespoon oil in pan..
- Add sliced onion in oil and roast till they turns to golden brown. Add all chopped vegetables in pan and cook it for 4-5 minutes or till they become soft, you can add or remove any vegetable of you choice from above mentioned vegetable list..
- Add cumin seeds powder and chopped tomatoes, cook everything for more 2-3 minutes..
- Now add 1/2 teaspoon red chilli powder, 1/2 teaspoon turmeric powder and salt as per taste..
- Add 2 cup water in it with roasted vermicelli, you can adjust the quantity of water if required. Cook vermicelli on medium flame for more 5-7 minutes and till seviyan perfectly cooked.Switch off the flame and serve delicious healthy sooji vermicelli with the garnishing of coriander leaves..
