3. Prepare to taste of grated mozzarella.
4. It's 1 teaspoon of dried oregano.
5. You need to taste of mature cheddar.
6. You need to taste of fresh basil.
7. It's 3 slices of thin-sliced ham (torn).
8. Prepare 3 slices of thin-sliced chicken (torn).
9. You need 3-4 slices of chorizo (torn).
10. It's 2 slices of pastrami (torn).
11. Prepare 2 rashers of smoked streaky bacon (sliced into lardons).
12. You need to taste of salt and freshly ground black pepper to season.
13. You need to taste of grated Mexicana cheese (optional).

1. Cut your bacon into large lardons. Preheat the oven to gas mark 8/450°F (230 °C).
2. Prep your base with the tomato sauce and some dried oregano,and grated mozzarella, then scatter with some torn basil.
3. If you want to add some extra spice, grate on Mexicana to taste....
4. Add some broken slices of cheddar, and season with black pepper and a little salt....
5. Next, add the the ham and the chicken. I'm using honey roasted dry-cured ham, and flame grilled chicken breast Scatter on some more cheese.
6. Add the pastrami....

8. And top with the bacon.
9. Scatter on a little more mozzarella and/or Cheddar.
10. Bake in the middle of the oven for 15-20 minutes or until the crust is golden brown and the cheese has melted. Serve and dig in.
